HEALTHY CORN & AVOCADO DIP WITH CHIPOTLE POPCORN
We all love the go-to avocado dip, guacamole. It’s a favourite in our home for sure, but it’s pretty standard.
Corn is in season, and goes beautifully with avocados. And OMG I love corn. I grew up literally eating it out of a can throughout the winter and yearning for that first taste of the real thing once the warm weather hit. Boiled, grilled, sautéed, baked- if you put corn on the table, I’m going to eat it up. So after I bought way too many cobs for two people to eat on the grill, I thought I would whip some into a light summer avocado dip for entertaining.
This avocado dip combines the natural sweetness of corn with the bright tanginess of lime and protein-rich Greek yogurt, the creaminess of avocado and ricotta, and a little heat from some jalapeno and chipotle chili. It’s a lot lighter (and sweeter) than your straight up guacamole or cheese-based dips, and offers a nice hit of protein from the ricotta and yogurt. I also will take any excuse to pop a bag of popcorn for a little supple texture.
One serving of this avocado dip clocks in at 98 calories and 4 grams of protein, not bad considering an equivalent amount of guacamole would leave you at closer to twice the calories, and a cheese sour cream dip would be at least 250! Light, healthy and a delicious way to celebrate my favourite summer vegetable- sounds like a reason enough to want to entertain.
